Pai Mu Tan or Bai Mu Dan, is a White tea from Fujian, China. It is made up of new leaf buds just before they open, and the two open leaves below that. Less oxidised than that of even a green tea, white teas have a delicate flavour profile all their own. Light, floral muscatel notes and slightly nutty in taste, this tea must be had alone and brewed just short of boiling.
